My friend (and coworker) Julia and I decided to enter homemade whoopie pies for our annual work Dessert Day.
The relatively easy whoopie pies were a big hit (at least we think?) and if not, we enjoyed them!
The recipe is from Just a Pinch 🙂
Although I have bad luck in the kitchen, between lighting breakfast casseroles on fire and serving my friends horrible veggies that didn’t really defrost, Julia, Mema and family helped make these perfect.
Carrot Cake Whoopie Pies!
Dessert Day @ The Zimmerman Agency
We had a wonderful family reunion dinner, so of course, Mema and I kicked off the after party.
My friends and I decided a few months back that we would TRI a new challenge, the Tri The Rez triathlon.
It’s quite comical because we all have our own strengths of the three parts of the race. My worst is definitely swimming. To make training more enjoyable, we goofed off, a lot…
We went into the race wanting to have fun and enjoy a nice Saturday morning activity, but we would be lying if we said we weren’t nervous standing there by the water before the whistle went off.
I think the key to enjoying Triathlons is a good support system and not taking yourself too seriously.
Libby and I laughed and joked the whole time on the bike and she may, or may not have, had to pull me in the swim — what a great friend!
One thing we all loved was the triathlon community, everyone was cheering us on and encouraging us the entire way. Entering the last mile of the run, I was just pumped to finish and have a beer. I definitely couldn’t have finished without my two “shred sisters.”
From triathlons to tailgates, we had our Saturday covered. Hopefully this won’t be a one time event, but a new lifestyle.
With Our Favorite Den Mother
My weekends are always better when I can spend Sundays with Mema drinking coffee, talking football and life.
She even trusted me to make breakfast, so I went to my go-to, Cheggs (cheese eggs).
They say a picture is worth a thousand words, but I think a painting may be more.
One of my best friends, Joe, was recently in town and surprised me with a gift.
After quickly unwrapping, I saw the beautiful painting. This photo means so much to me, not only is it one of my favorites, but we took this the day my grandfather passed away. Mema told me we needed to be happy even through the tough times. She said that he is in a better place, and we that we are blessed to have each other to lean on.
When I saw the painting, it took me right back to that moment two and a half years ago.
It means the world to me that Joe had this painted for me, but also because our friend P.J. painted it. He is extremely talented and I’m sure put extra love into it.
I am obsessed with the details on Mema’s face and the way he made the photo come to life.
To view the whole progress of the painting, click the image below (Thank you PJ!):
Mema always tells me “everyone should bleed garnet and have a heart of gold.”
We took this photo at the game in Tampa this weekend. >>—>>
In honor of the victorious Seminole win, I thought I would post a few photos of that wonderful day. >>—->>
New Game Day Sign
The only thing missing was Mema dancing on tables and playing beer pong! Go ‘Noles!
I would also like to take the time to pay homage to my iPhone4, a FSU/Clemson Gameday Casualty. What was your gameday casualty?
It’s time for another “Mema’s Take” where she imparts her knowledge upon us.
Red or White Wine?
I don’t know, but I do know different personality types choose different ones. Like me, I like to party and fun a good time and I like white!
What did you think of the Spice Girls Reunion at the Olympics?
I like my spices where I can see them everyday — in my kitchen cabinet.
How do you feel about Florida State being ranked #4?
It doesn’t matter where we are as long as we are ahead of Steve Spurrier’s team and that other team from Gainesville.
What do you think of the crop top fad?
I’ve always said ‘it pays to advertise!’

One of my cousins got married this weekend and unfortunately, I could not make it. I received this text photo late Saturday night….
This is what happens when I’m not there to supervise my grandmother, the wild woman!
I want to be just like her when I “grow up.”
Watch out… you might get what you’re after!
To kick off football season, my roommates and I decided to throw a gameday brunch… little did we know we would endanger our lives. This is what happens when we don’t have my grandmother, Mema’s, guidance.
We knew we had a large amount of people coming over so we decided to make three breakfast casseroles, pigs-in-a-blanket, fruit and bagels and donuts. We were proud of ourselves for staying in on a Friday night to prepare all of this food.
As we were getting ready, the casseroles were cooking in the oven. All of the sudden, one my roommates was screaming from the kitchen. I ran down the hall way to be greeted by smoke billowing out of the oven.
Of course, this was my doing. Who turns the BROIL on and leaves it?! FOR 10 MINUTES — WITH CORN FLAKES ON TOP!? Mema, might just disown me.
Thank God one of my roommates thought to scrape off the cornflakes, and it was my bright idea to add MORE cheese and MORE corn flakes. I’m actually pretty proud of that move… In my opinion, cheese makes everything better.
Here was our re-purposed casseroles that got devoured at the brunch.
The Set Up
At the end of the day crispy (charred?) casserole goes pretty well with a mimosa, or two 😉 Cheers to football season!
